ANGUS (210-240 g)
Known from its fine marbled meat, showing that the fat is evenly distributed. The resulting exceptional qualities include that it is more tender, juicy and savoury than other types of beef.
TOURNEDO (200 g)
One of the most delicate and juicy beef steaks, made from the central part of the sirloin.
RIB-EYE (300-350 g)
A steak of the entrecote from the upper rib region, much softer than NY Strip. Moreover, it features a large number of fine threads of fat (known as “marbling”). Generally, there is a belief that steak “eaters” can be distinguished into two types of people, depending on whether they prefer Rib-eye or NY strip.
NEW YORK (300 g)
A short loin steak prepared by removing part of the sirloin with the bone. It owes its name to the fact that the shape resembles the New York state. New York Strip is part of the short loin. The meat is a little harder than for a sirloin steak, but it has much more flavour.
T-BONE (500-550 g)
The king among steaks, worshiped by beef enthusiasts. The most popular steak in the US and England, where it has gained legendary status. It is named after the characteristic T-shaped bone dividing the steak into two unequal parts. The smaller one is a sirloin, the bigger is a short loin.
TOMAHAWK (0,9-1,2 kg)
A special cut of cote de boeuf steak (i.e. seasoned entrecote). Keeping the longer rib makes it easier to turn over the steak while grilling or frying. Moreover, the connective tissue on the bone gives the meat additional flavour.
